🥘 Ingredients
- 30 wonton wrappers (square, thin)
- FILLING:
- 200g pork mince
- 150g fresh prawns — peeled, deveined, roughly chopped
- 4 water chestnuts (canned, drained) — minced fine
- 2 cloves garlic — minced
- 1cm fresh ginger — minced
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp light soy sauce
- ½ tsp sugar
- Pinch of white pepper
- FOR SEALING: small bowl of water
- FOR AIR FRYING: oil spray or 2 tbsp oil for brushing
👨🍳 Steps
- Step 1 — Filling: Combine all filling ingredients in a bowl. Mix vigorously in ONE direction for 1 minute until the mixture becomes slightly sticky and cohesive — this develops the protein structure that gives the filling its satisfying snap when you bite in. Refrigerate 15 minutes.
- Step 2 — Fold (Triangle Method): Place 1 tsp filling in the centre of a wonton wrapper. Dab water around the edges. Fold the wrapper in half diagonally to form a triangle, pressing to seal firmly. Bring the two bottom corners of the triangle together, dab with water, and press to join. Repeat.
- Step 3 — Preheat Air Fryer: Preheat to 180°C for 3 minutes.
- Step 4 — Oil: Brush or spray each wonton generously with oil — every surface. This is what makes them golden, not just pale and dry.
- Step 5 — Air Fry: Place in basket in a single layer, not touching. Air fry at 180°C for 5 minutes. Flip and brush/spray again. Cook another 4-5 minutes until deep golden and very crispy.
- Step 6 — Serve immediately with sweet chilli sauce, or a mix of light soy sauce + rice vinegar + sliced chilli.
- Make ahead: Uncooked folded wontons freeze beautifully. Freeze on a baking sheet first, then transfer to a bag. Air fry from frozen at 180°C for 12-14 minutes.
