Nanthini's tandoori chicken adapted for the air fryer — intensely spiced, yoghurt-marinated chicken with the charred edges you expect from a tandoor oven. The high heat of the air fryer mimics the radiant heat of a clay oven better than a regular oven does.

  • Bone-in chicken pieces, thick yoghurt (must be full-fat), Kashmiri red chilli powder (for deep red colour with mild heat), tandoori masala, ginger-garlic paste, lemon juice, mustard oil (or regular oil). Two-stage marinade: a raw marinade first to tenderise, then the yoghurt marinade.
