  • Whole chicken pieces (bone-in, skin-on), turmeric, lemongrass (blended fine), galangal, coriander powder, cumin, chilli powder, garlic, ginger, yoghurt or coconut milk to bind. The secret is drying the chicken completely and a double-coat technique for the crispiest skin.
