🥘 Ingredients
- 200g dark chocolate (70% cocoa), 150g unsalted butter, 250g caster sugar, 3 large eggs, 1 tsp vanilla extract, 100g plain flour, 2 tbsp cocoa powder, ½ tsp salt. 8x8 inch (20x20cm) baking pan.
👨🍳 Steps
- Step 1: Preheat oven to 170°C fan. Line pan with parchment.
- Step 2: Melt chocolate and butter (double boiler or microwave 30-sec intervals). Stir smooth. Cool 5 min.
- Step 3: Whisk sugar into warm chocolate. Add eggs one at a time, whisking vigorously — batter should be glossy and ribbon-like. Add vanilla.
- Step 4: Fold in flour, cocoa, salt until JUST combined. Do not overmix.
- Step 5: Pour into pan. Bake 22-24 minutes. Toothpick should come out with moist crumbs, not clean.
- Step 6: Cool completely in pan minimum 1 hour before cutting.
- Step 7: For clean slices, refrigerate 30 min then cut with warm knife.
