Flaky, golden spiral curry puffs made in the air fryer — not deep-fried, but you honestly cannot tell the difference. Kak Zah's potato and sardine filling. The spiral pastry takes practice but the air fryer bakes them beautifully without the oil mess. Free recipe!

🥘 Ingredients

  • WATER DOUGH:
  • 250g all-purpose flour
  • 1 tsp salt
  • 120ml warm water
  • 2 tbsp ghee or butter
  • OIL DOUGH:
  • 150g all-purpose flour
  • 80g ghee or shortening (room temperature)
  • FILLING:
  • 300g potatoes — boiled, mashed roughly
  • 1 can sardines in tomato sauce (425g) — drained, flaked (or 200g minced chicken)
  • 1 medium onion — diced fine
  • 2 cloves garlic — minced
  • 2 tsp curry powder
  • 1 tsp chilli powder
  • Salt to taste
  • 1 tbsp oil

👨‍🍳 Steps

  1. Step 1 — Water Dough: Mix flour and salt. Rub in ghee until crumbly. Add warm water, knead until smooth and pliable. Cover, rest 30 minutes.
  2. Step 2 — Oil Dough: Mix flour and ghee until it forms a dough. It will be soft and greasy — that's correct. Rest 15 minutes.
  3. Step 3 — Filling: Heat oil, fry onion and garlic until softened. Add curry powder and chilli powder, fry 1 minute. Add potatoes and sardines/chicken. Stir and mash together. Season with salt. Cool completely.
  4. Step 4 — Make the Spiral: Divide water dough into 20 equal balls. Divide oil dough into 20 equal balls. Flatten one water dough ball into a 8cm circle. Place one oil dough ball in the centre, wrap the water dough around it and pinch to seal. Roll into an oval, roll it up like a swiss roll, turn 90°, roll into an oval again, roll up again. Flatten into a 9cm circle.
  5. Step 5 — Fill: Place 1 tsp filling in centre of each circle. Fold into a half-moon, crimp the edges firmly.
  6. Step 6 — Air Fry: Preheat air fryer to 180°C for 3 minutes. Brush karipap lightly with egg wash (1 egg + 1 tbsp water). Place in basket without touching. Air fry at 180°C for 15 minutes, flip at 8 minutes, until golden all over.
  7. Step 7 — Cool slightly before eating — the filling is very hot inside.
