🥘 Ingredients
- 20 spring roll wrappers (8-inch size, thawed if frozen)
- FILLING:
- 300g jicama (bangkuang) — julienned or grated coarse
- 1 medium carrot — julienned
- 50g glass noodles (tung hoon) — soaked in hot water 5 min, cut into 5cm lengths
- 200g prawns — peeled, chopped, OR 200g chicken mince
- 3 cloves garlic — minced
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp light soy sauce
- Salt and white pepper to taste
- 1 tbsp oil
- FOR SEALING:
- 1 tbsp plain flour mixed with 2 tbsp water (makes a paste)
- FOR AIR FRYING:
- Oil spray or 2 tbsp oil for brushing
👨🍳 Steps
- Step 1 — Filling: Heat oil in wok on HIGH. Fry garlic 30 seconds. Add prawns or chicken, cook through. Add jicama, carrot, and glass noodles. Stir-fry on high heat 2-3 minutes. Add oyster sauce, soy sauce, sesame oil, salt, and white pepper. Continue cooking until the filling is relatively dry — wet filling = soggy rolls. Cool COMPLETELY before wrapping.
- Step 2 — Wrap: Place a spring roll wrapper on a board, one corner pointing toward you (diamond position). Place 2 tbsp filling in a horizontal log shape in the lower third. Fold the bottom corner up over the filling. Fold the two side corners in. Roll tightly toward the top corner. Seal the last corner with the flour paste. Press to seal well.
- Step 3 — Preheat Air Fryer: Preheat to 190°C for 3 minutes.
- Step 4 — Oil: Brush each spring roll all over with oil, or spray generously with oil spray. Every surface must be lightly coated — dry spots won't brown.
- Step 5 — Air Fry: Place in basket in a single layer, seam side DOWN. Air fry at 190°C for 8 minutes. Flip, brush/spray with oil again. Cook another 6-7 minutes until deep golden and very crispy.
- Step 6 — Serve immediately with sweet chilli sauce.
- Tip: If reheating leftover spring rolls, air fry at 180°C for 4-5 minutes. They come back perfectly crispy.
